Jalousie Plantation, St Lucia

The Jalousie Plantation has unrivalled views of St Lucia’s twin Piton Peaks, symbol of the island and part of a UNESCO World Heritage Site. The peaks are volcanic plugs and rise dramatically next to the ocean. The hotel is about the undergo a whopping $100m refit from spring 2009, and will reopen in 2010 as The Tides Sugar Beach, with the same view, only even better facilities.

This art deco masterpiece was built in 1930 exudes old-fashioned charm and style. It’s set on a small hill in the coastal district of Vedado in the Cuban capital. It’s blessed with sweeping views of the harbour, sea wall and across into the Old Town.

The Luxor Hilton Hotel is one of our favourite Egyptian hotels, set along the Nile River in Luxor. There is nothing better than the view across to the Nile’s west bank (make sure you ask for a Nile-view room when booking). It is especially good at sunrise and sunset. At sunrise you get a procession of balloons taking off for their morning excursions, and sometimes they look as though they might land on your roof. In the evening feluccas sail upstream against the wind for sunset cruises before returning with the wind.
